Soleras System

In our winery we maintain the traditional system of criaderas and soleras for the process of aging of our fine and generous wines. The criaderas and soleras consist of a set of American oak wooden barrels placed in rows, the first of these rows being the solera, the name it receives, because it is on the ground.

From the solera is obtained the bottled wine, but always leaving at least 1/3 of the wine in the barrel, which will be filled with wine from the top row or second criadera, at the same time this one will be filled with the third criadera, and this last one with the new wine of the year, and always in all the criaderas respecting the 1/3 of the wine that remains to the one we call “the mother” and with which they go to mix the wines throughout their aging process while they go down the scales until they reach the solera.

In century-long barrels

Most of our casks are made of American oak and are more than 100 years old, which allows the wines to pass through them to pick up the nuances and scents of this centuries-old wood.
