In this section we include all those wines with more or similar than 15% of alcohol content, like the “amontillados”, “olorosos” or “dulces” (sweets).

Amontillados” after the biological ageing as “finos” we add them alcohol till 17% and keep them in the barrels with an oxidative ageing, because the veil of “flor” has disappeared and the wine is in contact with the oxygen. So these wines are very exclusive because they have both ageing, biological an oxidative.

Olorosos” are added alcohol till 16/17% after the fermentation, and then we keep them in the barrels for 7 or more years. The “olorosos” can be dry or sweet according to the sugar content of the grape.

Finally, in the “dulces” (sweets) alcohol is added just in the moment we obtained them, so this alcohol stop the fermentation and all the natural sugar of the grape stays in the wine. Then the wine is aged in the American oak barrels for 7 or more years. For these sweets wines we use the grape varieties with higher sugar content, like “Pedro Ximénez” or “Moscatel” varieties.
